STICHELTON

Type

Unpasteurised organic cows milk

Origin

Collingthwaite Farm, Welbeck Estate, Nottinghamshire

Tasting Notes

Flavours are cool and buttery with underlying nutty toasty notes. There is a spicy element from the blue mould but alongside that is a long lasting savouriness and caramel-like sweetness. The layers of flavours expand and develop in your mouth as you eat and last long after swallowing

Interesting Facts

Stichelton is one of very few unpasteurised English blue cheeses. It is made by Joe Schneider using organic, unpasteurised cows milk from Collingthwaite Farm on the Welbeck Estate

ISLE OF MULL

Type

Unpasteurised cows milk

Origin

The Reade Family Isle of Mull, near Tobermory

Tasting Notes

One of our moister cheddars with quite a soft texture and quite wild, farmy, fruity flavours – sometimes with an almost alcoholic tang. In winter, the cheeses are quite bright white in colour, in summer a light cream

Interesting Facts

Life on an island requires the Reade family to be resourceful and to use local resources as much as possible. Even feeding the cows provides challenges. Summers are short and the cows are kept inside for a lot of the year. In order to avoid supplementing the cows diet with expensive feeds from suppliers on the mainland, the Mull cows are fed the spent grain husks from the whisky distillery at Tobermory which is called draff. The Reades collect draff from Tobermory

CROTTIN DE CHAVIGINOL

Type

Natural rind goat’s milk cheese

Origin

Central France, Centre

Tasting Notes

A nutty flavor with a mushroom aroma

Interesting Facts

From the 16th century onward, most country folk in the region of Sauncerre rear goats and make cheese from their milk. In 1829, these cheeses are named Crottin de Chavignol and will slowly become a nationally (and internationally) recognized landmark cheese
