We are immensely proud of our pork in the Hungry Guest butchery. Not only do we use it for our sausages and in counter products, we have also dedicated a lot of time and effort to curing the meat to bring you exceptionally tasting bacon and hams.
We use Scott Free Range pork loin and legs for our bacon and Sussex dry hams. Using a traditional method of curing we use salt and our own blend of herbs and spices over and inside the pork. We then vacuum pack the meat and allow it to cure for 21 days. At this stage our green bacon is sliced or cold smoked in store using woodchips for that authentic smoky flavour.
After curing our hams are tied and cooked to produce our Sussex Dry Ham available from the charcuterie counter in our award winning Petworth food shop.
