Cherry Clafoutis

Ingredients

4 large eggs

160g Plain flour

160g butter, melted (plus a small piece for buttering the dish)

300ml milk

120g caster sugar

1 tsp vanilla extract

400g very ripe cherries, cut in half and destoned

I tbsp. of golden granulated sugar

To serve – Crème fraiche or cream

PREP TIME: 15 MINS  COOK TIME: 30 MIN  SERVES: 6

1. Preheat the oven to 180C/Gas 6

2. In a bowl, lightly beat the eggs together & whisk in the flour. Add the melted butter, vanilla extract, sugar & milk. Whisk again

3. Grease an ovenproof dish (approx. 22cm long & 4cm deep) with the knob of butter, then spread the cherries over the base. Place in the heated oven for 5 minutes to allow the juices to begin to develop

4. Remove after the 5 minutes and cover the cherries with the batter. Pop back into the oven and bake for another 20-25 minutes. To check whether it is cooked through insert a metal skewer or the point of a sharp knife and ensure it comes out clean

5. Sprinkle with the granulated sugar & serve warm with crème fraiche or cream
