Approx. 1.5kg watermelon
200 grams pumpkin seed
Fresh basil leaves
300 – 400 grams Feta cheese
Pinch of cracked black pepper
60ml Olive oil
1.Remove skin and seeds from the watermelon and cut into chucks.
2.Mix the pumpkin seeds with 20 ml of the olive oil and toast in a large skillet, till golden. Set aside to cool.
3.Toss the watermelon chunks with the remaining oil, the black pepper and torn basil leaves.
4.Sprinkle the toasted pumpkin seeds and crumbled feta on top.
Great on its own or as a refreshing starter on a hot day.
