One of our December Recipes of the month is a Christmas Ham Croque Madame. Perfect for Christmas leftovers on Boxing Day!
Ingredients:
Leftover Christmas ham, thinly sliced
25g Butter
25g Flour
100ml Milk
50g Grated gruyere
Pinch Ground nutmeg
4 slices Pain D’Alsace
50g Grated Gruyere
Dijon mustard
2 eggs
Directions
For the cheese sauce:
- Melt the butter in a saucepan
- Add the flour and cook on a low heat for 3-4 minutes.
- Add the milk 50ml at a time, stirring until the mix thickens before adding the next 50ml of milk.
- Whisk in 50g of the grated gruyere and the ground nutmeg.
To assemble:
- Lightly toast the bread.
- Spread one side with Dijon mustard and the other with the cheese sauce.
- Add the ham to the mustard size, then grated gruyere.
- Sandwich together, then spread the top with more cheese sauce and any remaining gruyere.
- Place in the oven for approximately 8-10 minutes, until the cheese is melted.
For the eggs:
- Heat a non-stick pan and add a drizzle of vegetable oil.
- Crack the eggs into the pan, and fry until the whites are set.
- Season with salt and pepper, and place on top of the sandwich.
